Pinot Grigio Blush Wine 2009
The grapes were picked in the cool of the early morning, destemmed and lightly crushed. After cold soaking for hours on the skins they were pressed off to cold settling, racked and innoculated with a carefully selected specific yeast to undergo a long, cold ferment to dryness before bottling. More textural than the 2008 Pinot Grigio, but similarly dry and minerally with layers of fruit and spice.
